This is because the tannic structure of red wine predominates over the aromatic characteristics of this yeast culture. Some bottle aging will change this. But will this wine have a chance? The quality is already excellent. Lots of cherry and small red fruit in the smell and taste, with a refined and elegant aftertaste. No burgundy style, but classic and at a lonely height!
