The sweetness is subsumed by the dank, heady, floral decay of peonies and damask rose petals; by the scent of forest floor and rotting logs; by the almost-bitter notes of clove and coffee bean. It is somehow more savoury than sweet, in the way DOP Aceto Balsamico or really beautiful pomegranate molasses is.
